missouri brinery - naturally fermented foods
Missouri Brinery is our line of delicious fermented vegetables, all made in an inspected facility. Our food safety plan has been approved by the City of Columbia health department and reviewed by the state’s manufactured foods program. Products come in sealed, labeled containers. All batches are made in a clean environment to ensure quality and safety, then pH tested to verify proper acidity.
Our current availability includes:
Crushed Red Peppers (Pepper Mash) - A blend of fermented red peppers with mild/medium spice level. A wonderful product with excellent and highly concentrated flavor. Two ingredients - peppers and salt. Fermentation lends notes of olive and wine with the fresh pepper flavor. Great as an ingredient in sauces or used as a condiment. Consider this a replacement for the crushed Calabrian peppers, but without the filler ingredients.
Sauerkraut - So fresh. So good.
Dill Pickles - Whole local cucumbers with dill, black pepper and garlic. Medium to large size.
Dill Pickled Okra - Perhaps our finest whole vegetable ferment. If you love pickled okra, you’ll love this. Perfectly salty and sour. Made with local okra using the same recipe as our dill pickles.
Pickled Jalapeños - Pickled whole, with a slit down the middle. Garlic and black pepper are the only seasonings on these. Great for stuffing or slicing into rings.
Custom Fermented Products - If you have interest in commissioning a custom fermented product, let us know. We’ve successfully made some custom products for wholesale customers. Get a clean, distinctive, delicious custom product. All the flavor and quality of a fermented product with none of the regulatory hassle on your end. Lead time is about three or four weeks.
